- 16 Cooked Jumbo Shrimp, Shells Removed
- 1 — 10 Ounce Bag Mixed Salad Greens
- 1 Mango, Peeled And Cut Into Small Cubes
- ½ Small Red Onion, Finely Chopped
- 1 Celery Stalk, Sliced Thin
- 1 Tablespoon Mint Leaves, Chopped
- 4 Tablespoons Fat-Free Italian Dressing
- Rinse the salad greens
- Place the shrimp in a bowl and pour dressing over them then put them in the refrigerator
- Combine the mango, onions, celery, and mint in a bowl
- Add the shrimp and dressing and mix thoroughly
- Place a bed of salad greens on two plates and divide the shrimp and mango mixture over each plate
