- 2 Pounds Green Beans Steamed And Chilled
- 1 Cucumber Sliced Into Quarter Slices
- 2 Red Onions Sliced And Separated Into Rings
- 3 Cloves Garlic Minced
- 3 Tablespoons Extra Virgin Olive Oil
- ¼ Cup Red Wine Vinegar
- 2 Tablespoons Water
- 1 Teaspoon Sugar
- Combine the beans and cucumber in a large bowl.
- Sauté the onion and garlic in 2 tablespoons of the oil until tender but do not brown.
- Stir in the vinegar, water, and sugar and simmer for 2 minutes stirring until the sugar is dissolved.
- Stir in the remaining tablespoon of oil.
- Spoon the onion and garlic sauce over the bean and cucumber mixture and serve.
- This will make 6 servings.
